So a few months ago, I shared with you how we were trying to go Paleo in this house. Ironic, right? After all, I am a cornfed child who ate potatoes, bread, beans, or corn at every meal growing up and those are forbidden on Paleo.
Anyways, Chris is having wonderful results with weight loss, increased energy, and overall feeling good since starting our adventure. Being pregnant, I am only half doing paleo. I eat little bread, lots of fruits and veggies, and meat (when I can stand it), my weakness and craving is potatoes!. Through our adventure, I have managed to keep weight gain to a minimum so far at 5 1/2 months, I have gained only 4 or 5 pounds.
We've also found several new recipes for vegetables we like. Here's a list of a few of our favorites. If you like one, let me know and I'll share the recipe.

Crockpot Cookin'
With my crazy schedule lately for "Back To School Immunization Clinics", it's been hard to cook I've been too lazy to want to cook supper at night. My solution? My crock pot!
I decided to try out a new bbq chicken recipe I found on the How Sweet It Is blog. Oh.My.Gosh it was delicious! I modified this recipe found here, and it turned out great!
I left out the smoked paprika ( I don't own that, lol), and used a hazelnut infused beer from hubs favorite brewery. I also didn't measure anything at all. I do a lot of my cooking that way! I just eyeball stuff :)
At any rate, it turned out incredibly delicious and was ready to eat when I got home from work that night! I love the blog I found this on, and can't wait to try out more of her recipes.

Grilled Corn
Here in Central Illinois we have plenty of corn. You can't drive a mile without running into a corn field in our county. Most is seed corn, but some is sweet corn that you can eat. A few nights ago, I made one of my husband's favorite meals....Savory mesquite grilled steaks, baked potatoes, and grilled corn. Yes, I said GRILLED CORN. Corn on the cob, grilled on the gas grill. It's very easy to make and delicious! The corn is crisp and juicy. Here's how to make it...
Soak desired number of ears of corn in ice water for 30 minutes. Soak these with the husk ON. When 30 minutes is up, remove corn from the water, and wrap each ear individually in aluminum foil. The ear needs to be completely sealed in the foil. Grill on medium heat for 25-30 minutes. When 30 minutes has passed, remove ears of corn from grill. Carefully remove foil. I recommend using oven mitts to do this. After foil is removed, shuck the corn (remove the husks). Use caution as the husks and ear of corn are extremely hot when you do this. Then, just serve as you normally would serve corn on the cob.
I know this seems like a long process for making corn on the cob, but the corn shucks much easier with this method and the corn is juicier and crisper. Cooking it on the grill gives it wonderful flavor.
If you like your corn on the cob a little sweeter, add some sugar to the water while you soak the ears. Its makes a wonderful super sweet corn.

Supper Tonight
I tried a new idea for supper tonight, courtesy of my friend. Its super easy and kid friendly. I have a very picky husband and son, so I was glad when they really liked this creation.
3-4 all beef hot dogs (or whatever kind you prefer), sliced into 1/2 inch pieces
Mustard
Shredded colby jack or cheddar cheese
Preheat oven to 350 degrees. Stretch out each crescent roll, using caution not to tear dough. In a muffin pan, place 1 crescent roll in greased muffin cup. Place 3-4 pieces of sliced hot dog, a teaspoon of mustard, and desired amount of shredded cheese in crescent dough. Fold edges of crescent roll over to enclose hot dog, mustard, and cheese. Place in oven and bake for 20-25 minutes or until golden brown.
